Cabernet Sauvignon is dry (not sweet) and has a healthy level of tannins, which is what causes your mouth to dry out when you sip it. Due to the high tannin levels, acidity and alcohol it is a great wine to pair with food. Common flavours found are bell pepper, green olive, herb, cassis, black cherry.
